Sweet tooths behold! My Banana Bread recipe is here!
Like all of the recipes I use, it has been adapted from many I have tried before and tweaked to my personal preferences.
I cook up a loaf or muffins most weekends to have with my daily cuppa. Its great just warmed in the microwave or if you have a sandwhich press lightly toasted would also be amazing, OR if you’re feeling particularly celebratory (not for a every day occasion) a good spread of butter and you’ve got yourself a real treat.
Ingredients
3 Medium Bananas
3 Eggs
1 tsp baking powder
1/2 tsp cinnamon
2 tsp vanilla essence
pinch of salt
1/4 cup coconut oil (melted)
1/4 cup honey
200-250g almond meal (depends on the size of your bananas and eggs)
Method
1 – Mash bananas in a bowl and mix in the eggs. If you’re after a smoother texture whiz them both in a food processor.
2 – Mix coconut oil and honey together and add to the banana, stir to combine.
3 – Add in the baking powder, vanilla essence, cinnamon and salt and stir to combine.
4 – Add in 200g of almond meal to start and then more if the mix is too runny. Once roughly combined, whisk to get rid of any lumps.
5 – Pour into a loaf or muffin tin and bake at 180. Muffins will take approx 35 minutes, a loaf will take about an hour. Cooked when a skewer inserted into the middle comes out clean.
