My favourite banana bread

Like all of the recipes I use, it has been adapted from many I have tried before and tweaked to my personal preferences.

I cook up a loaf or muffins most weekends to have with my daily cuppa. It’s great just warmed in the microwave or if you have a sandwich press lightly toasted would also be amazing, OR if you’re feeling particularly celebratory (not for an every day occasion) a good spread of butter and you’ve got yourself a real treat.

INGREDIENTS

  • 3 Medium Bananas

  • 3 Eggs

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 2 tsp vanilla essence

  • pinch of salt

  • 1/4 cup coconut oil (melted)

  • 1/4 cup honey

  • 200-250g almond meal (depends on the size of your bananas and eggs) 

METHOD

  1. Mash bananas in a bowl and mix in the eggs. If you’re after a smoother texture whiz them both in a food processor.

  2. Mix coconut oil and honey together and add to the banana, stir to combine.

  3. Add in the baking powder, vanilla essence, cinnamon and salt and stir to combine.

  4. Add in 200g of almond meal to start and then more if the mix is too runny. Once roughly combined, whisk to get rid of any lumps.

  5. Pour into a loaf or muffin tin and bake at 180. Muffins will take approx 35 minutes, a loaf will take about an hour. Cooked when a skewer inserted into the middle comes out clean.
